Ingredients:
. 3 ripe bananas
. 1/3 cup melted butter
. 1/2 cup sugar
. 1 egg beaten
. 1 tsp vanilla extract
. 1 tsp baking soda
. salt to taste
. 1 1/2 cups all purpose flour
. 1/2 cup roughly chopped pecans
topping: (optional)
. 1 banana cut into slices
. 2 tbs chocolate chips
Instructions:
- Preheat the oven to 350 degrees Fahrenheit.
- in a large bowl, add the bananas and mush until smooth. add in the melted butter and stir until well combined
- add the sugar, egg, vanilla, baking soda, salt and flour. Stir with a wooden spoon until the batter is almost smooth but not quite (there will be a few lumps)
- when the batter reaches that consistency, you can fold in the chopped pecans. This way the batter doesn’t get over mixed and it will have a nice rise!
- pour the batter into two mini loaf pans (6in x 3.5in) and add the toppings. Bake in the oven for about 40-45 minutes or until a toothpick inserted comes out clean.
- let it cool completely before serving and enjoy!
