One Bowl Banana Bread

Ingredients:

. 3 ripe bananas

. 1/3 cup melted butter

. 1/2 cup sugar

. 1 egg beaten

. 1 tsp vanilla extract

. 1 tsp baking soda

. salt to taste

. 1 1/2 cups all purpose flour

. 1/2 cup roughly chopped pecans

topping: (optional)

. 1 banana cut into slices

. 2 tbs chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. in a large bowl, add the bananas and mush until smooth. add in the melted butter and stir until well combined
  3. add the sugar, egg, vanilla, baking soda, salt and flour. Stir with a wooden spoon until the batter is almost smooth but not quite (there will be a few lumps)
  4. when the batter reaches that consistency, you can fold in the chopped pecans. This way the batter doesn’t get over mixed and it will have a nice rise!
  5. pour the batter into two mini loaf pans (6in x 3.5in) and add the toppings. Bake in the oven for about 40-45 minutes or until a toothpick inserted comes out clean.
  6. let it cool completely before serving and enjoy!
